Beef SalesWe are sold out until 2010. You can still place an order for the 2010 season. Highland cattle are noted for meat that is lean and low in cholesterol. Rather than adding a layer of fat for winter protection as other breeds do, Highland cattle grow long hairy coats, an under-down and a longer, coarser outer layer, which protects them from excessive cold and wind. These guidelines ensure first of all, that the beef is of the highest quality attainable for leanness and low cholesterol. Second, being raised humanely, finished slowly on natural pastures, and slaughtered humanely, the animals are never stressed, so the quality of the meat remains high. Third, besides the items mentioned in guideline #3, no animal proteins are ever fed to these cattle. |
