cattle are noted for meat that is lean and low in cholesterol. Rather
than adding a layer of fat for winter protection as other breeds
do, Highland cattle grow long hairy coats, an under-down and a longer,
coarser outer layer, which protects them from excessive cold and
wind. The result? Naturally low fat, low cholesterol beef.
Flathead Farms is a member of the American Highland Cattle Association's
Quality Highland Beef program.
After selecting the very best animals as breeding stock, the balance
are placed in the beef program, and at about 24 months of age, sent
to Big Sky Natural Beef for finishing. There, the animals are kept
on a program that ensures their weight gain will be at the rate
of 1.5 pounds a day or more -- all without artificial stimulants
or growth hormones. Big Sky Natural Beef does not keep their animals
on feed lots, but cares for them humanely in a manner guaranteed
to keep them stress-free.
